Abstract

Dragon fruit peel is an unused waste, but inside it contains anthocyanin which has antioxidant benefits and can
also detect artificial preservatives added to food such as tofu. Anthocyanin when reacting with formalin which is
acidic will produce a deep red color which indicates that the tofu contains formalin, but if the color produced is
pink or does not leave the color then the tofu does not contain formaldehyde. Misuse of formaldehyde occurs and
if swallowed or inhaled will endanger the health and can even cause death. This study aims to prove that
anthocyanin can detect the presence of formalin in tofu taken in several traditional markets of as big as 22
samples using a simple method. From the trial results showed 4 of the 22 tofu sold by traders in traditional
markets, the presence of formalin in tofu indicated by leaving a red color on the tissue. Traders or consumers can
detect formalin simply by using dragon fruit, so they can avoid formalin which endangers health at low prices.
